I am trying to find links or add'l information about a typical day in the life of a colonial innkeeper and what other roles the innkeeper may have played in the colony.

A great book to consult:  "A Day in the Life of a Colonial Innkeeper" By Kathy Wilmore

Probably the most comprehensive source for the subject, though, is Alice Morse Earle's, "Stage Coach and Tavern Days."

If you have a week or more to complete your research you should be able to find these books in any city library.  They are very common.

If on the other hand you were given this assignment three weeks ago and it is due in a day or two, oh well, Jimmy cracked corn and .....
